Preparing the Tenderloin

    Pat the grass-fed tenderloin dry with paper towels. Season both sides with salt and black pepper.

    Heat olive oil in a skillet over medium-high heat. Add the tenderloin and sear for 3-4 minutes on each side for medium rare. Remove from heat and let rest.

Making the Fries

    Preheat the oven to 425°F (220°C). Cut the potatoes into thin strips, and toss them in a bowl with olive oil, salt, and paprika.
