Main Ingredients

Method

Preparation

  1. 1

    Prepare the Asparagus

Rinse the asparagus spears under cold water. Trim the tough ends off the asparagus by snapping them at the natural break point or cutting about 1-2 inches from the bottom.

  2. 2

    Prepare the Fish

Pat the fish fillets dry with a paper towel. Season both sides with salt and black pepper. Squeeze half of the lemon over the fillets for added flavor.

  3. 3

    Mince the Garlic

Peel and mince the garlic cloves finely.

Cooking

  1. 4

    Sauté the Asparagus

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus and sauté for about 5-7 minutes, or until they are tender-crisp and bright green. Remove the asparagus from the skillet and set aside.

  2. 5

    Cook the Fish

In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Place the seasoned fish fillets in the skillet and cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

  3. 6

    Combine and Serve

Once the fish is cooked, add the sautéed asparagus back to the skillet to warm through. Squeeze the remaining lemon half over the dish for a fresh finish. Serve immediately, garnished with lemon wedges if desired.
