Method
Prepare the Chutney
- 1
Cook the Ingredients
In a medium saucepan over medium heat, combine the fresh cranberries, diced pear, sugar, apple cider vinegar, ground cinnamon, and a pinch of salt. Stir well to combine and bring to a simmer.
- 2
Simmer
Let the mixture simmer for about 10-15 minutes, stirring occasionally, until the cranberries burst and the chutney thickens slightly.
- 3
Cool
Remove from heat and allow the chutney to cool while you prepare the brie and crostinis.
Prepare the Crostinis
- 4
Slice the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices.
- 5
Brush with Olive Oil
Place the slices on a baking sheet and brush one side of each slice with olive oil.
- 6
Toast
Bake in the preheated oven for about 5-7 minutes, or until the crostinis are golden brown and crispy.
Bake the Brie
- 7
Prepare the Brie
While the crostinis are baking, place the brie wheel on a baking dish.
- 8
Top with Chutney
Once the crostinis are done, take them out of the oven and spoon the cooled cranberry-pear chutney generously over the top of the brie.
- 9
Bake
Return the brie to the oven and bake for an additional 10-15 minutes, or until the cheese is soft and gooey.
- 10
Serve
Remove from the oven and let it cool for a few minutes before serving. Serve warm with the toasted crostinis.
