Crab-Stuffed Flounder

Spinach & Mushroom Orzo

Preparation of Crab-Stuffed Flounder

    Prepare the filling

    In a mixing bowl, combine the blue crab meat, garlic bread crumbs, lemon juice, chopped parsley, salt, and black pepper. Mix gently to combine and set aside.

    Stuff the flounder

    Lay the flounder fillets on a clean surface. Spoon an equal amount of the crab filling onto each fillet. Roll the fillets up carefully and secure with toothpicks or kitchen twine if necessary.

    Cook the stuffed flounder

    In a large skillet, melt 2 tablespoons of butter over medium heat. Place the stuffed flounders seam side down in the skillet. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

    Prepare the butter sauce

    In the same skillet, add the remaining 2 tablespoons of butter and let it melt. Add a splash of lemon juice and stir to combine. Drizzle this butter sauce over the cooked flounder before serving.

Preparation of Spinach & Mushroom Orzo

    Cook the orzo

    In a medium saucepan, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the vegetables

    In a separate skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced mushrooms and cook until they are tender, about 5 minutes.

    Add spinach and combine

    Stir in the fresh spinach and cook until wilted. Add the cooked orzo, season with salt and black pepper, and toss everything together until heated through.
