Method

Preparation of Marinade

  1. 1

    Mix the Marinade

In a small bowl, combine the olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper. Stir well to combine all ingredients and set aside.

Prepare the Fish and Asparagus

  1. 2

    Marinate the Fish

Place the fish fillets in a shallow dish. Pour the marinade over the fish, ensuring all fillets are coated. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 3

    Prepare the Asparagus

While the fish is marinating, prepare the asparagus. Trim the tough ends off and rinse under cold water. If desired, you can also toss the asparagus with a little olive oil, salt, and pepper.

Cooking

  1. 4

    Cook the Fish

Preheat the grill or oven to medium-high heat. Remove the fish from the marinade and place it on the grill or a baking sheet if using the oven. Grill the fish for about 4-5 minutes per side, or until the fish flakes easily with a fork.

  2. 5

    Cook the Asparagus

On the grill, place the asparagus alongside the fish and grill for about 6-8 minutes, turning occasionally until tender and slightly charred. If using the oven, place the asparagus on a separate baking sheet and roast at 400°F (200°C) for about 10-12 minutes.

Serving

  1. 6

    Plate and Serve

Once cooked, remove the fish and asparagus from heat. Serve immediately with lemon wedges and sprinkle with additional fresh dill if desired.
