Artichoke Preparation

    Trim the Artichokes

    Start by rinsing the fresh artichokes under cold water. Using a sharp knife, cut off the top third of each artichoke to remove the thorny tips.

    Remove Outer Leaves

    Peel away the tough outer leaves until you reach the tender inner leaves. Trim the stem to about 1 inch from the base.

    Prevent Browning

    Rub the cut edges of the artichokes with lemon juice to prevent browning and enhance flavor. Sprinkle salt over them as well.

Cooking Liquid

    Prepare the Cooking Liquid

    In a large pot, combine 4 cups of water, 4 crushed garlic cloves, and 2 bay leaves. Bring the mixture to a boil over medium-high heat.

    Add Artichokes

    Once the water is boiling, carefully place the prepared artichokes into the pot, stem side down.

    Simmer

    Cover the pot and reduce the heat to low. Allow the artichokes to simmer for about 25-30 minutes, or until the leaves can be easily pulled off.

    Drizzle Olive Oil

    After cooking, remove the artichokes from the pot and drizzle 2 tablespoons of olive oil on top before serving.

    In a small bowl, combine 1 cup of mayonnaise, 2 tablespoons of Dijon mustard, 1 tablespoon of chopped fresh dill, 1 teaspoon of garlic powder, and 0.5 teaspoon of salt.

    Whisk the ingredients together until smooth and well combined. Adjust seasoning to taste.
