Citrus Gin & Tonic (small pour)

Build the gin & tonic
Chill a small tasting glass by filling it with ice briefly; discard that ice and add 3 fresh ice cubes. Pour 1.5 oz gin over the ice, add 0.25 oz fresh lime juice and 0.125 oz simple syrup. Stir gently with a bar spoon for 6–8 seconds to combine and chill.

Top the glass with 3 oz tonic water poured slowly over the back of a spoon to preserve carbonation. Give one gentle stir (2–3 rotations) to integrate without flattening.

Express the oils of a lime wheel over the surface, rim the glass if desired, and drop the wheel in as garnish. Serve immediately.

Strain into a chilled small tasting glass over one large ice cube. Express an orange peel over the drink to release oils, run the peel around the rim, and drop it in as garnish.
Spiced Old Fashioned (small pour)

Build & stir the Old Fashioned
In a mixing glass, add 0.25 oz demerara syrup, 2 dashes Angostura bitters and 1 dash orange bitters. Add 1 oz bourbon and fill with ice.

Stir for 20–25 seconds until well chilled and slightly diluted. Strain over a single large cube in a chilled tasting glass.

Express an orange peel or flame it briefly over the drink if desired, then place it on the rim as garnish. Serve immediately.
