In a small to medium saucepan set over medium heat, combine the bourbon, dark brown sugar, and light corn syrup. Stir gently to combine.

Bring the mixture to a gentle simmer, stirring occasionally to dissolve the sugar. Do not boil aggressively; a steady simmer for 3β4 minutes helps meld flavors and cooks off a little alcohol while retaining bourbon character.

Reduce heat to low. Whisk in the unsalted butter until melted and incorporated. Add the apple cider vinegar, Dijon mustard, lemon juice, soy sauce (or Worcestershire), minced garlic, grated ginger (if using), ground black pepper, red pepper flakes (if using), and salt. Stir to combine and simmer on low for 2 minutes to marry flavors.

Thicken to glaze consistency
