Grilled Redfish

Prepare the Fish
In a bowl, mix olive oil, Cajun seasoning, lime juice, and salt. Rub this mixture all over the redfish fillets. Let the fish marinate for at least 30 minutes.

Grill the Fish
Preheat your grill to medium-high heat. Place the marinated redfish fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and has grill marks.

Make the Aioli
In a bowl, combine mayonnaise, chipotle peppers, lime juice, minced garlic, and salt. Mix well until all ingredients are fully incorporated. Adjust seasoning to taste.
Cajun Rice

Cook the Rice
In a saucepan, heat the chicken broth to a boil. Add white rice, Cajun seasoning, diced bell pepper, and chopped onion. Stir, cover, and reduce heat to low. Cook for about 18-20 minutes or until the rice is tender and the liquid is absorbed.
Roasted Brussels Sprouts

Roast the Brussels Sprouts
Preheat the oven to 425°F (220°C). Toss the halved Brussels sprouts with olive oil, salt, and black pepper on a baking sheet. Roast for about 20-25 minutes, stirring halfway through, until they are crispy and golden brown.
