Filet Mignon

    Prepare the Steaks

    Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

    Season the Steaks

    Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steaks

    In a large skillet, heat olive oil over medium-high heat. Once the oil is hot, place the steaks in the skillet. Sear for about 4-5 minutes on each side for medium-rare, or adjust time to your preferred doneness.

    Rest the Steaks

    Once cooked to your liking, remove the steaks from the skillet and let them rest on a plate, loosely covered with foil, for about 5 minutes.

Red Wine Demi-Glace

    Sauté Shallots

    In the same skillet used for the steaks, add the finely chopped shallots. Sauté over medium heat until they are translucent, about 2-3 minutes.

    Deglaze the Pan

    Pour in the red wine, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let it reduce by half.

    Add Beef Stock

    Add the beef stock and thyme to the skillet. Simmer for about 10-15 minutes until the sauce thickens slightly.

    Finish with Butter

    Remove the skillet from heat and stir in the butter until melted and the sauce is smooth. Season with salt and pepper to taste.

Roasted Fingerling Potatoes

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Potatoes

    Wash and dry the fingerling potatoes. Cut them in half lengthwise.

    Season the Potatoes

    In a large bowl, toss the potatoes with olive oil, minced garlic, chopped rosemary, salt, and black pepper until evenly coated.

    Roast the Potatoes

    Spread the potatoes on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes, or until golden brown and tender, turning them halfway through.

Grilled Asparagus

    Prepare the Asparagus

    Wash the asparagus spears and trim the tough ends.

    In a bowl, toss the asparagus with olive oil, salt, and black pepper until evenly coated.

    Grill the Asparagus

    Preheat a grill or grill pan over medium-high heat. Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred.
