Short Ribs

Creamy Parmesan Polenta

Grilled Asparagus

Method

Coffee Braised Short Ribs

  1. 1

    Sear the Short Ribs

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the short ribs with salt and pepper and sear them on all sides until browned, about 3-4 minutes per side.

  2. 2

    Sauté the Aromatics

Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion is translucent.

  3. 3

    Add the Liquid Ingredients

Pour in the brewed coffee, beef broth, soy sauce, and brown sugar. Stir to combine.

  4. 4

    Braise the Ribs

Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and braise the short ribs for 3-4 hours, or until the meat is tender and falling off the bone.

  5. 5

    Finish and Serve

Once the ribs are done, remove them from the pot and let them rest for a few minutes before serving.

Creamy Parmesan Polenta

  1. 6

    Boil Water

In a large saucepan, bring the water to a boil. Add salt to the boiling water.

  2. 7

    Cook the Polenta

Slowly whisk in the polenta, stirring continuously to prevent lumps. Cook for about 20-25 minutes until thickened.

  3. 8

    Add Cream and Cheese

Stir in the heavy cream, butter, and grated Parmesan cheese until smooth and creamy. Adjust seasoning with salt if necessary.

Grilled Asparagus

  1. 9

    Prepare the Asparagus

Trim the tough ends off the asparagus spears and place them in a bowl.

  2. 10

    Season and Grill

Drizzle the asparagus with olive oil, salt, and black pepper. Toss to coat evenly. Grill on medium-high heat for about 5-7 minutes, turning occasionally until tender and slightly charred.
