Method

Chicken Scallopini

    Prepare the Chicken

    Pound the chicken breasts to an even thickness. Season both sides with salt and black pepper.

    Dredge the Chicken

    Coat each chicken breast in flour, shaking off the excess.

    Cook the Chicken

    In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook until golden brown, about 3-4 minutes per side. Remove from skillet and keep warm.

    Make the Sauce

    In the same skillet, add minced garlic and sauté for about 30 seconds. Add lemon juice and capers, scraping up any browned bits from the skillet. Cook for 2-3 minutes until slightly reduced.

    Finish the Dish

    Return the chicken to the skillet, spooning the sauce over the top. Add the remaining butter and let it melt. Serve immediately.

Creamy Parmesan Polenta

    Boil Water

    In a large saucepan, bring 4 cups of water to a boil. Add salt.

    Cook Polenta

    Gradually whisk in the polenta, reducing heat to low. Stir constantly until thickened, about 5 minutes.

    Add Cream and Cheese

    Stir in the heavy cream and Parmesan cheese until smooth. Season with black pepper.

    Cover and keep warm on low heat until ready to serve.

French Green Beans

    Prepare the Beans

    Trim the ends of the French green beans.

    Blanch the Beans

    In a pot of boiling salted water, blanch the green beans for 3-4 minutes until bright green. Drain and set aside.

    Sauté the Beans

    In a skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds. Add the green beans, salt, and pepper, sautéing for 3-4 minutes until heated through.
