Prepare the Bread
Preheat the oven to 350°F (175°C). Cut the stale bread into 1-inch cubes and place in a large bowl.

Mix Wet Ingredients
In a separate bowl, whisk together the milk, heavy cream, sugar, eggs, vanilla extract, and ground cinnamon until well combined.

Combine Ingredients
Pour the wet mixture over the bread cubes. Add the toasted pecans, diced apples, and golden raisins. Gently fold to combine and ensure the bread absorbs the liquid.

Bake the Pudding
Transfer the mixture to a greased baking dish and bake for 40-50 minutes or until the top is golden brown and the center is set. Let cool slightly before serving.

Make the Caramel
In a saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves, then stop stirring and allow to boil until the mixture turns a deep amber color.

Once caramel is ready, carefully add the heavy cream and butter. It will bubble vigorously, so be cautious. Stir until smooth.

Remove from heat and stir in the bourbon and a pinch of salt. Allow to cool slightly before serving over the bread pudding.
