Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a pot, bring to a boil, then reduce to low heat and cover. Cook for about 20 minutes or until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Season Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked sushi rice. Let the rice cool to room temperature.

Prepare Tuna Mixture
In a bowl, combine drained tuna, ponzu sauce, honey, and chopped scallions. Mix until well combined.

Make Spicy Mayo
In a separate small bowl, mix mayonnaise and sriracha until well blended. Adjust the sriracha quantity to taste.

Form Rice Bites
Wet your hands and take a small portion of sushi rice, flatten it slightly in your palm. Place a spoonful of the tuna mixture in the center and mold the rice around it to form a bite-sized ball.

Sear the Rice Bites
Heat vegetable oil in a non-stick skillet over medium heat. Once hot, add the rice bites and sear until golden brown on all sides, about 2-3 minutes per side.

Serve
Drizzle with additional ponzu sauce, serve with spicy mayo on the side, and garnish with extra scallions.
