    Prepare the Base

    In a saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar dissolves and the mixture is warm but not boiling.

    Mix Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and thick. Slowly pour in the warm milk mixture while continuously whisking to temper the yolks.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.

    Cool and Flavor

    Remove from heat and stir in the vanilla extract. Divide the base into three equal parts and mix in each flavor: coconut, espresso, and pistachio paste. Add salt to taste.

    Chill

    Cover each flavor mixture and refrigerate for at least 4 hours or overnight.

    Churn

    Churn each flavor in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the gelato to airtight containers and freeze for at least 4 hours until solid.
