    Prepare the Ingredients

    Chop the purple cabbage, scallions, mushrooms, bok choy, and carrots into small pieces. Set aside.

    Cook the Shrimp

    In a large pan or wok, heat sesame oil over medium-high heat. Add the shrimp and cook until they turn pink, about 3-4 minutes. Remove from the pan and set aside.

    Scramble the Eggs

    In the same pan, crack the eggs and scramble them until fully cooked. Remove and set aside.

    Stir-Fry the Vegetables

    Add the chopped vegetables (cabbage, scallions, mushrooms, bok choy, and carrots) to the pan and stir-fry for about 5-7 minutes until they are tender.

    Combine Everything

    Add the cooked rice, shrimp, and scrambled eggs back into the pan. Pour the soy sauce over everything and stir well to combine. Cook for an additional 3-4 minutes, seasoning with salt and pepper to taste.

    Once everything is heated through, serve the shrimp fried rice hot, garnished with extra scallions if desired.
