    Prepare the Short Rib Filling

    Season the short ribs with salt and black pepper. Sear in a hot pan until browned on all sides. Add chopped onion and minced garlic, and cook until softened. Cover and braise in the oven at 160°C (320°F) for 3 hours until tender. Shred the meat and mix it with the cooking juices.

    Make the Mushroom Dashi

    In a pot, combine dried shiitake mushrooms, kombu, and water. Bring to a simmer and let it steep for 30 minutes. Strain and set aside.

    Caramelize the Onions

    In a skillet, melt butter over medium heat. Add sliced onions and cook until soft, about 10 minutes. Sprinkle with brown sugar and continue cooking until caramelized, about 20 more minutes.

    Pickle the Serrano Peppers

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil and pour over sliced serrano peppers in a jar. Allow to cool and refrigerate for at least 1 hour.

    Assemble the Dumplings

    Place a small spoonful of the short rib filling onto the center of each dumpling wrapper. Fold and seal the edges tightly. Steam or boil the dumplings for about 6-8 minutes until cooked through.

    Serve

    Serve the dumplings in bowls with mushroom dashi, topped with caramelized onions and pickled serrano peppers.
