    Prepare the crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and let cool.

    Make the filling

    In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add sour cream, pistachio nuts, and vanilla extract, mixing until fully incorporated. Add eggs one at a time, mixing on low speed until just blended.

    Bake the cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggles. Turn off the oven and let the cheesecake cool inside for 1 hour.

    Chill and serve

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Before serving, slice fresh apples and serve them on the side with scoops of vanilla gelato.
