Flourless Chocolate Cake

    Preheat Oven

    Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.

    Melt Chocolate and Butter

    In a medium saucepan, melt the chocolate chips and butter over low heat, stirring until smooth. Remove from heat and let cool slightly.

    Mix in Sugars and Eggs

    Stir in the granulated sugar into the chocolate mixture until well combined. Add the eggs one at a time, mixing well after each addition.

    Add Cocoa, Vanilla, and Salt

    Sift in the cocoa powder, then add the vanilla extract and salt. Mix until fully incorporated.

    Bake the Cake

    Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean.

    Cool and Serve

    Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve with Sticky Pecan Toffee and Espresso Gelato.
