Crispy Calamari

Preparation and Cooking

    Prepare the Calamari

    Clean the calamari and cut them into rings. Pat them dry with paper towels.

    Make the Flour Mixture

    In a bowl, combine flour, cornstarch, salt, and black pepper. Mix well.

    Coat the Calamari

    Dredge the calamari rings in the flour mixture until well coated.

    Heat the Oil

    In a deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the calamari in batches to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Blister the Shishitos

    In the same oil, add the shishito peppers and fry for about 1-2 minutes until blistered. Remove and drain on paper towels.

    Make the Garlic Aioli

    In a small bowl, combine mayonnaise, minced garlic, and lemon zest. Mix well.

    Serve

    Serve the crispy calamari with blistered shishitos and garlic aioli on the side. Garnish with lemon wedges.
