    Prepare the Rack of Lamb

    Preheat the oven to 400°F (200°C). Season the rack of lamb with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over high heat. Sear the lamb on all sides until browned, about 3-4 minutes.

    Roast the Lamb

    Transfer the seared lamb to a roasting pan and roast in the preheated oven for 20-25 minutes for medium-rare. Use a meat thermometer to check for an internal temperature of 135°F (57°C).

    Prepare Polenta Fries

    While the lamb is roasting, cook polenta according to package instructions. Once thickened, pour into a greased baking dish and let it cool to set. Once set, cut into fries and bake in the oven for 20 minutes until crispy.

    Sauté Asparagus and Mushrooms

    In the same skillet, add the remaining olive oil and sauté minced garlic, cremini mushrooms, and asparagus for 5-7 minutes until tender. Season with salt and pepper.

    Make Dijon Mustard Cream

    In a small saucepan over low heat, combine heavy cream and Dijon mustard. Stir until smooth and warm, about 5 minutes.

    Serve

    Slice the rack of lamb and serve alongside crispy polenta fries, sautéed asparagus and mushrooms, drizzled with Dijon mustard cream.
