    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    Mix Dry Ingredients

    In a medium bowl, whisk together the flour, baking powder, and salt.

    Combine Wet Ingredients

    In a large bowl, beat the eggs and sugar together until light and fluffy. Gradually add the olive oil, lemon zest, and lemon juice.

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

    Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
