    Prepare the Sauce

    Roast the red bell peppers and carrots until soft and slightly charred. Allow to cool, then blend until smooth. Add olive oil, salt, and pepper to taste.

    Roast the Tomatoes

    Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, salt, and roast for about 15-20 minutes or until they burst.

    Cook the Bacon and Breadcrumbs

    In a skillet, cook the bacon until crispy. Remove and chop into small pieces. In the same skillet, add the breadcrumbs and cook until golden brown.

    Sauté the Spinach

    In the same skillet, add the fresh spinach and sauté until wilted. Season with salt and pepper.

    Cook the Chilean Sea Bass

    Season the Chilean sea bass fillets with salt and pepper. In a clean skillet, heat olive oil over medium-high heat and cook the fish for about 4-5 minutes on each side or until cooked through and flaky.

    On a plate, pour the roasted red pepper and carrot sauce. Place the Chilean sea bass on top, add sautéed spinach, roasted tomatoes, and sprinkle with bacon breadcrumbs.
