    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

    Combine Wet Ingredients

    In another bowl, mix the vegetable oil, eggs, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the grated carrots and toasted walnuts.

    Bake the Cake

    Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

    Make the Frosting

    In a bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy and spreadable.

    Once the cakes are completely cool, spread the cream cheese frosting over the top of one layer, place the second layer on top, and frost the top and sides of the cake.
