Burrata Cheese Salad

Preparation

    Roast the Beets

    Preheat the oven to 400°F (200°C). Wrap the golden beets in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes, or until they are fork-tender. Let them cool, then peel and slice them.

    Prepare the Tomatoes

    While the beets are roasting, wash the cherry tomatoes and halve them. Set aside.

    Make the Toast

    Mince the garlic cloves and mix them with 1 tablespoon of extra-virgin olive oil. Brush the garlic oil mixture on both sides of the bread slices. Toast them in a skillet or oven until golden brown.

    Assemble the Salad

    On a serving plate, arrange the roasted beet slices and halved cherry tomatoes around the burrata cheese. Drizzle with balsamic vinaigrette and the remaining extra-virgin olive oil. Season with salt and black pepper to taste.

    Garnish and Serve

    Garnish with fresh basil leaves. Serve with garlic toast on the side.
