Preparation Steps

    Prepare the Beets

    Wash and peel the beets. Cut them into small cubes and boil in salted water until tender, about 20 minutes. Drain and set aside.

    Sauté the Onions and Mushrooms

    In a skillet, heat the olive oil over medium heat. Add sliced red onions and sauté until translucent. Add sliced shitake mushrooms and cook until they are warm and tender. Season with salt and black pepper.

    Prepare the Tomatoes and Lettuce

    Chop the tomatoes and wash the romaine lettuce. Tear the lettuce into bite-sized pieces.

    Assemble the Salad

    In a large bowl, combine the warm beets, sautéed onions and mushrooms, chopped tomatoes, and romaine lettuce. Toss gently.

    Add Cheese and Dressing

    Crumble the goat cheese over the salad and drizzle with balsamic vinaigrette. Toss lightly to combine.

    Top with pumpkin seeds and serve immediately.
