Prepare the Filet Mignon
Season the filet mignon generously with salt and black pepper on both sides.

Sear the Steak
In a skillet, melt 1 tablespoon of butter over medium-high heat. Add the filet mignon and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Make the Sauce
In the same skillet, add the green peppercorns and brandy. Cook over medium heat, scraping up any browned bits from the bottom of the skillet. Allow the brandy to reduce by half, then stir in the heavy cream. Simmer until the sauce thickens, about 5 minutes.

Finish the Sauce
Whisk in the remaining tablespoon of butter into the sauce. Adjust seasoning with salt and pepper to taste.

Serve
Slice the rested filet mignon and arrange on plates. Drizzle with the green peppercorn sauce. Serve with frites on the side, and garnish with shaved black truffle.
