Cook the Penne Pasta
In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Shrimp
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, Cajun seasoning, salt, and pepper. Cook for about 3-4 minutes until the shrimp are pink and cooked through.

Make the Sauce
Reduce the heat to low, then stir in the sun-dried tomatoes and heavy cream. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.

Combine Everything
Add the cooked penne pasta to the skillet, tossing to combine with the shrimp and sauce. Stir in the chopped basil and half of the shaved Parmesan cheese.

Serve the dish warm, topped with the remaining Parmesan cheese and additional basil if desired.
