Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches for 4-5 minutes until golden brown. Remove and drain on paper towels. Season with salt.
Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Slowly pour in the cold sparkling water and mix until smooth.
Prepare the Fish
Rinse the cod fillets and pat dry. Dip each fillet into the batter, allowing excess to drip off.
Fry the Fish
In the same oil used for the fries, carefully place the battered fish fillets in the hot oil. Fry for 4-6 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Prepare the Cole Slaw
In a large bowl, combine the coleslaw mix with coleslaw dressing and toss well. Refrigerate until ready to serve.
Serve
On a plate, arrange the fish and fries. Serve with tartar sauce, lemon wedges, cole slaw, and a sprinkle of fresh parsley.
