Filet Mignon Ingredients

Method

Cooking Instructions

  1. 1

    Prepare the Steak

Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This will help the steak cook more evenly.

  2. 2

    Season the Steak

Pat the steak dry with paper towels. Season generously with salt and black pepper on both sides.

  3. 3

    Heat the Pan

In a cast-iron skillet or heavy pan, heat the olive oil over medium-high heat until it's shimmering.

  4. 4

    Sear the Steak

Carefully place the filet mignon in the hot skillet. Sear for about 4-5 minutes on one side without moving it, until a nice crust forms.

  5. 5

    Flip and Add Aromatics

Flip the steak and add minced garlic, rosemary, and butter to the pan. Continue cooking for another 3-4 minutes for medium-rare, basting the steak with the melted butter and garlic.

  6. 6

    Check Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130-135°F (54-57°C).

  7. 7

    Rest the Steak

Remove the steak from the pan and let it rest on a plate for about 5 minutes before slicing. This allows the juices to redistribute.

  8. 8

    Serve

Slice the filet mignon and serve it with your choice of sides.
