Make clove-infused simple syrup (can be prepared ahead)

Prepare syrup
Combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan. Add 6 whole cloves. Bring to a gentle simmer, stirring until sugar dissolves. Remove from heat and let steep for 15–20 minutes for a pronounced clove note, or 5–10 minutes for a lighter clove influence. Strain out cloves and cool. Store refrigerated up to 2 weeks.
Mix the cocktail

Fill a mixing glass or shaker with the indicated amount of ice.

Add 2 oz blended & peated Scotch, 1/2 oz Yellow Chartreuse, 1/2 oz apricot liqueur, 1/2 oz fresh lemon juice, 1/2 oz clove-infused simple syrup, and 1 dash Angostura bitters to the ice-filled vessel.

Stir (recommended for spirit-focused cocktails) for about 20–30 seconds until well chilled and slightly diluted. If you prefer a slightly brighter texture, you can shake vigorously for 10–12 seconds to aerate and integrate the citrus more.

Strain the cocktail into a chilled coupe or Nick & Nora glass (or an old-fashioned glass with a large ice cube if you prefer it on the rocks).
