Method
Cocktail
- 1
Prepare acid-adjusted grapefruit juice (optional, makes ~4 oz)
If you don't have pre-adjusted grapefruit juice, combine 3 oz fresh grapefruit juice with 1/8 to 1/4 tsp food-grade citric acid OR 1/2 oz simple syrup to taste. Stir and taste: the goal is bright, slightly tart grapefruit with a balanced sweetness. Chill before use.
- 2
Add a large mixing ice cube to a mixing glass or shaker to chill and dilute the cocktail properly.
- 3
Pour 1.5 oz reposado tequila, 0.5 oz mezcal, 0.5 oz Calabrian chili amaro, 1 oz acid-adjusted grapefruit juice, 0.25 oz fresh lime juice, and 0.25 oz simple syrup into the mixing glass.
- 4
Stir (if using a mixing glass) for 15–20 seconds until well chilled and slightly diluted (about 10–12 full turns). If you prefer a slightly frothier, more aerated texture, you may shake vigorously for 8–10 seconds with ice instead.
- 5
Strain the cocktail over fresh ice in a rocks glass (use 1 large ice cube or fill with crushed/regular ice to about 3/4 full).
- 6
Express the oils of a grapefruit twist over the drink, run the twist around the rim, and drop it in (or garnish with a thin grapefruit wheel).
- 7
Serve immediately. Optional: for extra chili aroma, lightly torch the skin of the twist before expressing oils (exercise caution).
