Combine jam and citrus
Place 1 tsp spiced blood orange jam and 0.5 oz fresh lime juice in a shaker or mixing glass. If your jam is very thick or particularly tart, add 0.25 oz simple syrup. Use a bar spoon to vigorously stir or muddle the jam until it is loosened and mostly dissolved into the lime juice (about 15–20 seconds).

Add spirit and chill
Add 2 oz Seedlip Grove and 6 ice cubes to the shaker. Secure the shaker and shake briskly for 10–12 seconds to chill and further incorporate the jam; if using a mixing glass, stir for 20–30 seconds until well chilled and slightly diluted.

Strain and top
Double strain the mixture into a chilled rocks glass over fresh ice (use a fine mesh strainer to catch jam solids). If you prefer a slightly longer, spritzy drink, top with 1 oz soda water and gently stir once to combine.

Garnish and serve
Garnish with a lime wheel and a blood orange twist (or a dehydrated citrus slice) laid on the rim or floated on top. Serve immediately.
If making spiced blood orange jam

Prepare fruit: Zest one of the blood oranges, then juice all three. Remove any seeds from the juice.

Cook: In a small saucepan combine the blood orange juice and zest, 3 tablespoons sugar, 1 tablespoon lemon juice, 1/4 tsp ground cinnamon, 1/8 tsp ground ginger, and 3 whole cloves. Bring to a gentle boil over medium heat, then reduce to a simmer, stirring occasionally.

Reduce: Simmer for 12–18 minutes until the mixture thickens to a jammy consistency. Remove the cloves, taste and adjust sweetness (add up to 1 tablespoon more sugar if needed).

Finish and store: Cool slightly, then transfer to a clean jar. The jam will thicken further as it cools. Use 1 teaspoon per cocktail; stored refrigerated, it will keep about 2 weeks.
