    Prepare fruit and glass

    If using whole passionfruit, cut one large passionfruit in half and scoop out approximately 2 tablespoons of pulp (seeds + juice). Chill a Collins or highball glass by filling it with ice and cold water while you prepare the cocktail; discard chilling ice/water before assembling.

    Build and mix

    In a cocktail shaker add the passionfruit pulp, 0.5 oz fresh lime juice and 0.5 tsp simple syrup (adjust to taste). Add 2 oz Aplos Ease botanical spirit and fill the shaker with a small handful of ice (about 1/2 cup). Shake vigorously for 10–12 seconds to chill and integrate flavors and to slightly break down passionfruit seeds.

    Strain into glass

    Discard the chilling ice/water from the glass. Fill the chilled Collins/highball glass with fresh ice (clear cubes or crushed, about 1 cup). Double-strain the shaker contents into the glass using a fine mesh strainer over a Hawthorne or julep strainer to remove most passionfruit seed solids (retain some seeds for texture if desired).

    Top and finish

    Top the drink with approximately 4 oz chilled ginger beer, pouring slowly to preserve effervescence. Give the glass a gentle stir (1–2 rotations) to integrate ginger beer with the spirit and fruit.

    Garnish and serve

    Garnish with a lime wheel on the rim and optionally a half passionfruit floated on top or a mint sprig for aroma. Serve immediately with a straw if desired.
