    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash the baking potatoes thoroughly, then pierce each potato several times with a fork. Rub them with olive oil, and sprinkle with salt and black pepper. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender.

    Prepare the Stuffing

    While the potatoes are baking, prepare your stuffing ingredients. If using brisket, chop it into small pieces. If using pulled pork, shred it. Mix the cheese, green onions, and your choice of meat in a bowl.

Assemble the Stuffed Spuds

    Stuff the Potatoes

    Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently fluff the insides with a fork. Spoon the stuffing mixture into each potato, generously filling them.

    Return the stuffed potatoes to the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.
