For the Soup

Add Vegetables
Add carrots, celery, and potatoes; cook for a few minutes. Pour in vegetable broth and add bay leaf. Bring to a boil.

Simmer
Reduce heat and let it simmer for about 20-25 minutes until vegetables are tender. Season with salt and pepper to taste.
For the Salad

Prepare the Salad
Wash and chop the lettuce for Caesar salad or mixed greens for Garden salad. Slice cucumber and cherry tomatoes.

Toss the Salad
For Caesar salad, toss with Caesar dressing, croutons, and Parmesan cheese. For Garden salad, toss with balsamic vinaigrette.
For the Cornbread

Mix Dry Ingredients
In a mixing bowl, combine cornmeal, flour, baking powder, sugar, and salt.

Bake
Pour the wet mixture into the dry ingredients, stir until just combined. Pour into a greased baking dish. Bake at 400°F (200°C) for 20-25 minutes.
