Prepare the Turkey
Rinse the turkey under cold water and pat dry with paper towels. Remove the giblets and neck from the cavity.

Season the Turkey
In a bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, black pepper, salt, and fresh thyme. Rub the mixture all over the turkey, including under the skin and inside the cavity.

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Turkey
Place the soaked wood chips in the smoker box or directly on the coals. Put the turkey on the grill grate, breast side up. Smoke for about 30 minutes per pound, or until the internal temperature reaches 165°F (74°C).

Rest and Serve
Remove the turkey from the smoker and let it rest for at least 20 minutes before carving. Serve and enjoy!
