    Preparation of the Rub

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, smoked paprika, fresh rosemary, and fresh thyme. This will be your spice rub.

    Preparing the Prime Rib

    Pat the prime rib roast dry with paper towels. Rub the olive oil all over the roast, then generously apply the spice rub, making sure to cover all surfaces. Let it sit at room temperature for about 1 hour.

    Preparing the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Once preheated, add the soaked wood chips to the smoker box.

    Smoking the Prime Rib

    Place the seasoned prime rib in the smoker. Smoke for approximately 30 minutes per pound, or until the internal temperature reaches your desired doneness (130°F for medium-rare, 140°F for medium).

    Resting the Meat

    Once smoked, remove the prime rib from the smoker and let it rest for at least 20-30 minutes before slicing. This allows the juices to redistribute.

    Slice the smoked prime rib against the grain and serve with your favorite sides.
