Preparation of Meat

Cooking the Brisket or Pork
Season the brisket or pork with salt and pepper. Smoke or grill until the internal temperature reaches 195°F for brisket or 145°F for pork. Let rest for 10 minutes before slicing.

Making the Cornbread
Preheat the oven to 400°F (200°C). In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt. In another bowl, combine the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Pour the batter into a greased 8-inch square baking dish and bake for 20-25 minutes until golden brown.

Assembling the Plate
On a smaller plate, serve ¼ pound of your choice of brisket or pork alongside your selected side dish and a piece of freshly baked cornbread.
