    Soak the Beans

    Rinse the dried pinto beans under cold water and place them in a bowl. Cover with water and let soak overnight.

    Cook the Beans

    Drain and rinse the soaked beans. In a large pot, combine the beans with 3 cups of fresh water. Bring to a boil, then reduce heat and simmer uncovered for about 1.5 hours or until beans are tender.

    Sauté Vegetables

    In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened, about 5 minutes.

    Combine Ingredients

    Add the sautéed vegetables, salt, black pepper, garlic powder, onion powder, cayenne pepper, and chopped tomatoes to the pot with the beans. Stir well and simmer for another 20 minutes.

    Finish and Serve

    Once the beans are thick and flavorful, stir in the fresh cilantro. Serve hot, as a side dish or part of a main meal.
