Steak Preparation

    Prepare the Steak

    Season the top sirloin steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until the desired doneness is reached.

    Make the Bourbon Butter

    Melt the butter in a small saucepan over medium heat. Add finely chopped shallots and sauté until they become soft and translucent. Stir in the bourbon and fresh thyme, and cook for an additional minute. Remove from heat and set aside.

Crispy Onions

    Prepare Crispy Onions

    Slice the onion into thin rings and soak in buttermilk for at least 30 minutes. Dredge the soaked onions in flour, shaking off the excess. Heat oil in a frying pan and fry the onions until golden brown. Drain on paper towels.

Calabacitas

    Cook Calabacitas

    In a skillet, heat olive oil over medium heat. Add diced zucchini and yellow squash, sautéing for about 5 minutes. Stir in corn, salt, black pepper, and fresh cilantro. Cook for an additional 3-4 minutes until the vegetables are tender.

    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the russet potatoes and prick them with a fork. Rub with salt and bake directly on the oven rack for 45-60 minutes until tender. Serve with butter, sour cream, and chopped chives.
