Preparation of Glaze

    Make the Brown Butter BBQ Glaze

    In a saucepan over medium heat, melt butter, swirling occasionally until it turns a golden brown color and has a nutty aroma. Remove from heat and stir in BBQ sauce and lemon juice. Set aside.

Cooking the Salmon

    Grill the Salmon

    Preheat grill to medium-high. Season salmon fillets with salt and black pepper. Grill the fillets for about 4-5 minutes on each side, brushing with the brown butter BBQ glaze during the last few minutes of cooking.

Sautéed Spinach

    Sauté the Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add spinach and cook until wilted, about 3-4 minutes. Season with salt and black pepper.

Butternut Squash Puree

    Prepare the Puree

    In a pot, boil butternut squash until tender, about 15 minutes. Drain and return to pot. Add butter, salt, nutmeg, and heavy cream. Blend until smooth using an immersion blender or food processor.

Plating

    Serve the Dish

    On each plate, place a serving of butternut squash puree, top with grilled salmon, and serve sautéed spinach on the side.
