Cooking the Pasta and Chicken

Cook the Pasta
In a large pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.

Grill the Chicken
Meanwhile, season chicken breasts with olive oil, salt, and black pepper. Grill over medium heat for 6-7 minutes on each side or until fully cooked. Let rest before slicing.
Making the Sauce

Prepare the Sauce
In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Pour in heavy cream and bring to a simmer.

Add Cheese and Veggies
Stir in Parmesan cheese until melted. Add fresh spinach and diced tomatoes, cooking until spinach wilts. Mix in the cooked pasta and sliced chicken, tossing to combine.
Preparing Garlic Bread

Make the Garlic Bread
Preheat the oven to 375°F (190°C). Mix butter, garlic powder, and parsley in a small bowl. Spread the mixture over sourdough bread slices and place on a baking sheet.

Bake the Bread
Bake in the preheated oven for about 10-12 minutes or until golden and crispy.

Serve the grilled chicken pasta warm, garnished with extra Parmesan cheese if desired, alongside the garlic bread.
