Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare the Filling
In a large bowl, mix the refried beans, calabacitas, and 1 cup of the Tucumcari Sharp Cheddar cheese.

Fill the Tortillas
Take a corn tortilla, spoon about 1/4 cup of the filling mixture into the center, and roll it up tightly. Place seam-side down in a greased baking dish.

Add Sauce and Cheese
Once all tortillas are filled and placed in the baking dish, pour the red or green chile sauce over the top. Sprinkle the remaining 1 cup of cheddar cheese on top.

Bake Enchiladas
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serving

Garnish and Serve
Remove from the oven and let cool for a few minutes. Garnish with sour cream, chopped cilantro, and sliced jalapeños if desired. Serve hot.
