Preparing the Brisket

Season the Brisket
In a small bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, black pepper, and salt. Rub this mixture all over the brisket. Let it sit for at least 1 hour, or overnight in the refrigerator for best results.

Smoke the Brisket
Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and cook for about 10-12 hours, or until the internal temperature reaches 195°F (90°C). Use a meat thermometer to check the temperature.

Wrap and Rest
Once the brisket reaches the desired temperature, wrap it in foil and let it rest for at least 1 hour. This allows the juices to redistribute.

Chop the Brisket
After resting, chop the brisket into bite-sized pieces.
Assembling the Sandwich

Prepare the Buns
Lightly toast the brioche buns on a grill or in the oven.

Build the Sandwich
Layer chopped brisket on the bottom half of each bun. Add your choice of pickles, barbecue sauce, and coleslaw. Top with the other half of the bun.
