Assemble the Quesadilla
Heat a large skillet over medium heat. Place one tortilla on the skillet and sprinkle half of the shredded cheddar cheese evenly over it. Add half of the brisket mixture on top of the cheese, then sprinkle with more cheddar cheese before topping with another tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes on one side until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side.

Repeat
Remove from the skillet and let it cool for a minute. Repeat the process with the remaining tortillas and filling mixture.

Serve
Cut the quesadillas into wedges and serve warm with sour cream on the side.
