    Prepare the Compound Butter

    In a bowl, mix together softened butter, minced garlic, and fresh herbs. Shape into a log, wrap in plastic wrap, and refrigerate until firm.

    Cook the Potatoes

    Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and mash with milk, salt, and pepper to taste. Set aside.

    Grill the Filet Mignon

    Preheat the grill to medium-high. Brush the filets with olive oil and season with salt and black pepper. Grill the filets for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest.

    Sauté the Vegetables

    In a skillet, heat a tablespoon of olive oil over medium heat. Add seasonal vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper.

    Make the Carrot Puree

    In a saucepan, combine chopped carrots and vegetable broth. Simmer until carrots are tender, about 15 minutes. Puree in a blender until smooth, adding more broth if necessary.

    Plate the Dish

    On each plate, place a scoop of mashed potatoes, top with the grilled filet mignon, a dollop of compound butter, sautéed vegetables on the side, and a drizzle of carrot puree garnish.
