Preparing the Chicken

Prepare the Chicken
Preheat the oven to 375°F (190°C). Flatten chicken breasts to about 1/2 inch thick using a meat mallet. Season with salt and pepper.

Assemble the Filling
Place a slice of smoked ham, a slice of smoked Gouda cheese, and a spoonful of bacon lardons on each chicken breast.

Roll the Chicken
Carefully roll up the chicken, securing it with toothpicks if necessary. Dredge each roll in gluten-free flour, dip in beaten eggs, and then coat with panko breadcrumbs.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Sear the chicken rolls on all sides until golden brown, about 3-4 minutes. Transfer to the oven and bake for 20-25 minutes.
Making the Whiskey Cream Sauce

Add Cream and Whiskey
Pour in heavy cream and whiskey, stirring to combine. Season with salt and black pepper. Let simmer until thickened, about 5 minutes.

Make the Mashed Potatoes
Boil potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter and heavy cream. Season with salt and pepper.
