Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the grated carrots and walnuts if using.

Bake the Cake
Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

Prepare Cream Cheese Frosting
In a bowl, beat together 8 oz cream cheese, 1/2 cup unsalted butter, 4 cups powdered sugar, and 2 tsp vanilla extract until smooth and creamy.

Frost the Cake
Once the cakes are completely cooled, spread a layer of cream cheese frosting between the two layers, then frost the top and sides of the cake.
