Preparation

    Make the Compound Butter

    In a bowl, mix the softened butter with parsley, chives, minced garlic, and lemon juice. Form into a log shape, wrap in plastic wrap, and refrigerate until firm.

    Prepare the Mashed Potatoes

    Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain, then mash with milk, butter, salt, and pepper until smooth.

    Prepare the Carrot Puree

    In a saucepan, combine the chopped carrots and water. Bring to a boil and cook until tender, about 15 minutes. Drain and blend with butter and salt until smooth.

Cooking the Steak

    Grill the Angus Ribeye

    Preheat the grill to high heat. Rub the ribeye steaks with olive oil, salt, pepper, and garlic powder. Grill for 5-7 minutes on each side for medium-rare, or to desired doneness. Let rest for 5 minutes before serving.

    In a skillet, heat olive oil over medium-high heat. Add seasonal vegetables, season with salt and pepper, and sauté for 4-5 minutes until tender-crisp.
